Puffed Quinoa & Peanut Butter Bars

Bars are a great no-hassle treat to eat while hiking. Making them homemade allows you to customize them to your preference.

5 minutes / 15 minutes

INGREDIENTS

  • 2 1/2 cups puffed quinoa
  • 1/2 cup creamy peanut butter
  • 1/2 cup honey (or other liquid sweetener such as agave or maple syrup)
  • 1/2 cup almonds (or nut of choice)
  • 1/4 tsp salt

Optional: chocolate chips

DIRECTIONS (prepare at home)

Mix puffed quinoa, almonds, salt, and chocolate chips (if using) in a large bowl, and set aside.

Heat peanut butter and honey in a pot over medium-low heat until pour-able.

Pour peanut butter mixture over quinoa and stir thoroughly.

Press finished mix into a lined 8x8 tray, and let cool overnight.
