Spicy Oatmeal Pancakes
Pump up your plain ol' pancakes with the addition of hearty oats and a kick of cinnamon.

INGREDIENTS
- 3/4 cup quick-cook rolled oats
- 2 1/2 tsp brown sugar
- 1/2 tsp salt
- 1/4 tsp cinnamon
- 1/8 tsp nutmeg
- 2 1/2 tbsp dried apple or raisins
- 1 cup milk
- 1/4 cup butter
- 1 egg
- 1/4 cup flour
- 1 tsp baking powder
Optional: chocolate chips, peanut butter
Directions

Heat butter and milk in pot until hot.

Remove from heat, then thoroughly stir in dry ingredients (except for baking powder). Set aside to cool.

Beat in egg until blended.

Stir in flour and baking powder until just blended until just blended. Let stand 2 minutes.

Pour about 1/3 cup batter onto hot and lightly oiled griddle to make 1 pancake.

Cook until edge becomes dry and bubbles form. Turn with spatula and cook for 25-45 seconds longer until browned on both sides.

Repeat with remaining batter. Makes about 9 3-inch pancakes.
